This cool, creamy side dish is packed with potatoes, crunchy vegetables and a little bacon to honor the flavors of the traditional Ukrainian recipe olivye. This recipe is part of the 2018 Food & Nutrition cultural competency series, My Global Table.

Servings: 12
Serving size: ½ cup (120 grams)
Prep time: 1 hour
Cooking time: 25 minutes

Ingredients

  • 1 tablespoon salt
  • 2 large white potatoes
  • 2 medium carrots, peeled and snapped in half
  • 1 cup frozen sweet peas
  • 2 strips center-cut bacon, cooked
  • 3 large hard-boiled eggs, peeled
  • ½ cup diced sweet onion
  • ½ cup diced pickles (about 5 baby dill pickles)
  • 1¼ cup diced English cucumber
  • ¼ cup mayonnaise
  • ½ cup 2% Greek yogurt
  • ⅛ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Bring an 8-quart stockpot of water and 1 tablespoon salt to a boil.
  2. Carefully add potatoes and boil about 20 minutes, until potatoes are fork tender. Add carrots during the last 10 minutes of cooking.
  3. Using a large slotted spoon or skimmer, remove carrots and potatoes, transfer to a bowl and place in refrigerator to cool.
  4. Add peas to the boiling water and cook 5 to 7 minutes or until softened. Drain and let cool on the counter.
  5. Peel skins off the cooled potatoes. Dice potatoes, carrots, cooked bacon and boiled eggs into uniform pieces, about ¼ inches.
  6. Place diced ingredients in a large bowl with onion, pickles, cucumber and cooked peas.
  7. In a medium bowl, stir mayonnaise, Greek yogurt, salt and pepper until combined.
  8. Gently fold dressing into diced ingredients using a spatula, taking care not to mash potatoes.
  9. Cover and refrigerate at least 2 hours before serving.

Nutrition per serving: 119 calories, 5g total fat, 1g saturated fat, 46mg cholesterol, 155mg sodium, 14g carbohydrate, 2g fiber, 2g sugar, 4g protein, N/A potassium, N/A phosphorus

  • Track your food intake and view daily calorie and macronutrient levels. Review macronutrient ratios throughout the day to see how close you are to goal.
  • Customize the app with favorite and frequently eaten foods, meals and recipes for easy recall.
  • Easily add foods and meals with a couple taps.
  • Turn on coach tips for additional motivation.
  • Includes a collection of recipes with nutrition information and tags indicating ease of prep or if it fits a specific dietary restriction like gluten-free or vegetarian.
  • Recipes are easy and mostly healthy though limited in the basic version.

Cons

  • Must surrender an email address and basic personal information to create an account and use the app.
  • The basic version of the app doesn’t allow you to view data for more than breakfast meals, making it less beneficial compared to free apps in the category like MyFitnessPal or LoseIt.
  • Lacks significant direction and resources on how to eat well in the basic version.
  • Frequent pop-up ads encourage upgrading to pro membership to access the complete recipe database, “nutritional” plans, and nutrition tips.
  • Heavy focus on calories may not be suitable for everyone. Users are encouraged to keep calorie goals as “exact as possible,” not going below or above the set goal. Instructions state to fill the diary, track foods (portions and quantity) using a kitchen scale for the first week.

Bottom Line

Yazio is best for those who have success with strict calorie counting and who can include the pro version in the budget.

Bottom Line

Ideal for the body-curious, Rthm may help you gain insight into how activities and the highs and lows of the day affect overall health, stress and sleep. Though this is an emerging area, Rthm is a good start in the quantified self space.

The Fagor Lux LCD Multicooker makes one-pot cooking quick and convenient. This appliance has 10 functions to pressure cook, slow cook, steam, brown, sauté and simmer plus one-touch settings to make yogurt, grains, eggs and desserts. This means you can make steel cut oats in half the time, or brown meats and sauté vegetables and go directly to slow cooking chili, stew or pot roast in just one pot. This not only saves time but lots of messy clean up. The multicooker also comes with a steam basket and trivet.

I spent about five minutes unboxing and reading the quick-start guide to get set up. I tested the pressure cooker function with my no-sugar added applesauce recipe (with the skin on!). It took about 30 minutes from unboxing to slicing the apples to cooking to eating. The 6-quart, removable, stainless steel pot is roomy and a breeze to clean. I added three pounds of apples and still had plenty of space to spare.

With the option to set and save custom settings for your family’s favorite recipes, the LCD screen makes this multicooker very easy to set up and keep tabs on where you are in the cooking process. Though you still must consider food safety, the multicooker allows up to a six-hour start delay. When the food is ready, the multicooker can automatically switch to the “keep warm” phase, so your meal stays hot.

If you’ve never used a pressure cooker and shy away from it because of horror stories where food ends up on the ceiling or much worse, a multicooker may be a good place to start. The lid won’t even open if there’s pressure inside. Fagor also provides a handy guide detailing the times and settings to prepare a variety of foods to help ease into the process.

I can’t wait to try out the other functions!

If you’re looking for a do-it-all appliance, this multicooker is a winner.  Though it may not have the same brand recognition as a certain popular one, it performs just as well.

 Cons

  • Can’t sign up without sharing a valid mobile phone number.
  • Though full name, email address and phone number and location are not visible to other users, it is available to the coaches.
  • It’s a battery hog. Expect to use at least 18 percent battery power for a 30-minute class.

Bottom Line:

Newcomer Gixo mimics in-person classes like few others have. Privacy issues aside, Gixo is ideal for those who enjoy group classes but want them in a fun, convenient and affordable platform.
